A Longford woman, who is the managing director of a company that provides lunches to school children is hopeful they can produce up to 50,000 lunches per day by the middle of next year.
Newtowncashel native Ger Killian runs 'The Lunch Bag' which has moved its HQ to Athlone recently, with its manufacturing base in Nenagh in County Tipperary.
The company is a partnership with Longford-based Fresh Today which also provides hot meals to dozens of schools across the country.
They are set to double their workforce at their manufacturing hub in the coming months and as well as employing up to 20 people in Athlone they are also offering opportunities to graduates.
