A local chef is encouraging people to shop local and reduce waste this Easter.
Aaron Duffy is the Executive Chef at Castle Leslie Estate and he says that lamb remains the firm favourite for Easter dinner.
He says for anyone cooking lamb for the first time the leg is a good option, but for more advanced cooks a rack of lamb prepared by your local butcher will make the perfect dinner centre piece.
Aaron is also encouraging everyone to shop local and look for in season vegetables, and speaking to Shannonside Northernsound said there are ways to re-use leftovers to reduce waste:
