Plans to develop a boutique hotel and farm shop are still being considered for Boyle according to a well-known local business couple. Liam and Justina Gavin run a range of businesses centred around the concept of organic farming. According to the latest Census of Agriculture, there are 1,686 organic farms in Ireland, representing 1.3 per cent of farm holdings in Ireland.
The Roscommon based couple's land is divided between the shores of Lough Key in Boyle and pasture land at Grange just outside Roscommon town. Food from their farm is sold at their restaurants and farm shops in Carrick-on-Shannon and Strandhill, Sligo. Justina Gavin says plans for a much needed hotel in the town haven't been forgotten:
