Up to 40 new jobs are likely to be created in the expansion of the Drumanilra organic enterprise in Boyle.
Liam Gavin came to live in the north Roscommon town in 2012 with his wife, Justina, after he inherited a farm.
They have established a successful organic farm, run by Liam, while Justina runs an organic burger, café and kitchen-farm shop in Boyle.
They are now expanding the north Roscommon retail outlet and establishing new cafés and farm shops in Carrick-on-Shannon and Sligo town.
This is likely to increase Drumanilra’s workforce from ten to 50.
For Tuesday's Bottom Line, Eoghan Murphy visited the Boyle facility and met Liam and Justina, whom he first asked about the background to the enterprise.
Elsewhere in Boyle, Roscommon County Council has revealed it intends to retain the main section of the Royal Hotel in the town.
The local authority bought the 200-year-old building last June for €100,000 after it closed as a hotel about five years before.
Alan O’Connell, the head of town-centre planning, told Eoghan Murphy the council hopes to retain the main section of the building.
