Ingredients
- knob of butter
- 1 small onion, diced
- 1 leek, trimmed sliced
- 1 small carrot, cube
- 1 potato, large cubed
- 50 g smoked haddock(Chunk)
- 400ml Fish stock
- 200g mixed fresh fish fillets (skinned and cut into bite-sized pieces - cod, hake or salmon)
- 175 g raw dublin bay prawns
- 1 tblsp chopped fresh flat-leaf parsley
- 150ml cream
- salt and freshly ground black pepper

Method
- Heat a large pan over a medium heat. Add the butter and once it is foaming, tip in the onion, leek, carrot ,potato and smoked Haddock. Sauté for 2-3 minutes until softened.
Add the fish stock and bring to a simmer. Follow with the fresh fish and shellfish.

- Return the pan to a simmer
- Add the parsley and cream, and season to taste.
Pour over into a oven proof dish and top with mashed potato & bread crumbs. Bake in oven for 10 min at 180*c.
Take it out & serve with sourdough croute
